I am at my wits' end here, anyone care to give me some advice?

What ages are you talking about here? I would think the only way to do this would be to 'screen' the children and parents briefly beforehand (ie. the kids must come to the sign-up with the parents and be briefly interviewed about their interest in art). Turn down people whose children clearly seem only interested in disrupting before they attend a single class.
